Ingredients
  

  • 1.5 lbs chicken tenders or chicken breast cut into strips
  • 2 tbsp olive oil
  • 1 unit lemon juiced
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • 0.25 cup feta cheese crumbled, for garnish

Method
 

  1. Combine olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper in a bowl. Add chicken and toss to coat. Marinate for 30 minutes to 4 hours.
  2. Heat a large skillet over medium-high heat with a drizzle of oil (or preheat oven to 400°F).
  3. If using skillet: Cook tenders for 5-6 minutes per side until golden and internal temp is 165°F.
  4. If using oven: Bake on a parchment-lined sheet for 12-15 minutes, flipping halfway through.
  5. Transfer chicken to a plate and let rest for 3-5 minutes to keep them juicy.
  6. Sprinkle with fresh parsley and feta before serving with lemon wedges.

Notes

Letting the chicken rest for 3 to 5 minutes after cooking is the secret to keeping them juicy. For the best flavor, use fresh lemon juice rather than bottled. These are excellent served cold over salads for meal prep.
