  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1/2 cup milk or half-and-half
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste for mashed potatoes
  • 1/4 cup sour cream or cream cheese optional, for mashed potatoes

Equipment

  • Large bowl
  • 9x5 inch loaf pan
  • small bowl
  • measuring cups and spoons
  • cutting board
  • knife
  • Garlic press
  • Potato masher or electric mixer
  • large pot
  • Meat thermometer
  • Oven
  • spatula

Method

  1. **Meatloaf:**
  2. 1. Preheat your oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan.
  3. 2. In a large bowl, combine the breadcrumbs and milk. Let sit for 5 minutes.
  4. 3. Add the ground beef, ground pork, onion, garlic, eggs, cheese, ketchup, Worcestershire sauce, Dijon mustard, oregano, basil, salt, pepper, and parsley (if using) to the bowl with the breadcrumbs.
  5. 4. Gently mix all the ingredients together until just combined. Be careful not to overmix.
  6. 5. Transfer the meat mixture to the prepared loaf pan and gently press it down to create an even surface.
  7. 6. Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  8. 7. Once the meatloaf is cooked through, remove it from the oven and let it rest for 10-15 minutes before slicing and serving.
  9. **Mashed Potatoes:**
  10. 1. Place the potatoes in a large pot and cover them with cold water.
  11. 2. Bring the water to a boil and cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes.
  12. 3. Drain the potatoes well and return them to the pot.
  13. 4. Add the milk and butter.
  14. 5. Using a potato masher or an electric mixer, mash the potatoes until smooth and creamy.
  15. 6. Season the mashed potatoes with salt and pepper to taste.
  16. 7. If you want to add sour cream or cream cheese, stir it in until well combined.
  17. 8. Serve immediately with the meatloaf.

Notes

For a richer flavor, consider using a blend of cheddar and Monterey Jack cheese in the meatloaf. To prevent the meatloaf from sticking, line the loaf pan with parchment paper. Warming the milk and butter before adding to the potatoes helps create a creamier texture. Leftover meatloaf and mashed potatoes can be stored separately in airtight containers in the refrigerator for up to 3-4 days. Reheat gently in the oven or microwave. A glaze of ketchup, brown sugar, and Worcestershire sauce can be added during the last 15 minutes of baking for enhanced flavor.
