Smoky Garlic Butter Chicken Pasta

Ingredients
  

  • 1.25 lb boneless skinless chicken breast or thighs cut into 1-inch pieces, patted very dry
  • 2 tsp sweet smoked paprika (Pimentón de la Vera)
  • 1 tsp kosher salt plus more to taste
  • 0.5 tsp freshly ground black pepper
  • 2 tbsp extra-virgin olive oil divided
  • 1 large shallot finely diced (about ½ cup)
  • 6 large garlic cloves finely minced (6–7 cloves)
  • 0.75 cup unsalted butter 170g, divided — keep cold until use
  • 0.25 cup dry white wine Sauvignon Blanc or Pinot Grigio recommended
  • 0.5 cup heavy cream 120ml; sub full-fat coconut cream for dairy-free
  • 12 oz bronze-die pasta casarecce, fusilli, or tagliatelle recommended
  • 0.5 lemon, zested zest only
  • 0.33 cup freshly grated Parmigiano-Reggiano plus more for serving
  • 3 tbsp fresh flat-leaf parsley finely chopped
  • 1 tsp fresh thyme leaves optional
  • 0.25 tsp ground nutmeg optional
  • 1 pinch flaky sea salt for garnish, optional

Method
 

  1. Pat chicken very dry with paper towels. In a bowl, combine smoked paprika, 1 tsp salt, and ½ tsp pepper. Toss chicken to coat evenly. Let sit 10 minutes at room temperature.
  2. In a small pan over medium-low heat, warm 1 tbsp olive oil. Add smoked paprika and stir constantly for 30–45 seconds until fragrant and deepened in color. Transfer immediately to a small dish to cool.
  3. Heat remaining 1 tbsp olive oil in a large heavy-bottomed skillet over medium-high heat. When shimmering, add chicken in a single layer (work in batches if needed). Sear undisturbed 3–4 minutes per side until deeply golden and cooked through (165°F internal temperature). Transfer to a plate and tent loosely with foil.
  4. Reduce heat to medium-low. Add shallots and 2 tbsp butter to the skillet. Cook 3–4 minutes until soft and translucent. Add minced garlic and the cooled paprika mixture. Stir constantly for 60–90 seconds until fragrant — do not let garlic brown.
  5. Pour in white wine, scraping up all browned bits from the bottom of the pan with a wooden spoon. Simmer 2–3 minutes until reduced by half. Whisk in heavy cream and remaining cold butter, adding it piece by piece, until fully melted and sauce thickens slightly — about 90 seconds. Keep heat low; do not allow sauce to boil hard.
  6. Cook pasta in a large pot of well-salted boiling water until 1 minute shy of al dente per package directions. Before draining, reserve ½ cup pasta water.
  7. Return chicken and any accumulated juices to the skillet. Add drained pasta, lemon zest, 2 tbsp parsley, and Parmigiano-Reggiano. Toss gently with tongs over low heat for 1–2 minutes until evenly coated and warmed through. Add reserved pasta water 1 tbsp at a time if sauce is too thick.
  8. Remove from heat. Stir in remaining parsley. Taste and adjust salt, pepper, or add a small squeeze of lemon juice. Serve immediately, garnished with extra Parmigiano, fresh parsley, and a pinch of flaky sea salt.

Notes

Storage: Refrigerate in an airtight container for up to 3 days. For best results, store sauce/chicken and pasta separately. Reheat gently in a skillet over low heat with a splash of water or broth. The sauce and chicken (without pasta) freeze well for up to 3 months. Substitutions: Swap white wine for ¼ cup low-sodium chicken broth + 1 tsp apple cider vinegar. For dairy-free, use full-fat coconut cream and vegan butter. Protein swaps: shrimp (add last 2 minutes), smoked sausage, or roasted cauliflower for vegetarian. Pasta tip: Bronze-die pasta with rough texture grips the sauce best. Make-ahead: Cook chicken and aromatics up to 2 days ahead; combine with fresh pasta when ready to serve.
