- Grab a cast-iron skillet or griddle and set it over medium-high heat. (The pan is ready when a flicked water droplet sizzles and evaporates quickly.)
- Take $1/4$ of the ground beef and press it directly onto one side of a flour tortilla. Smash it down firmly and thinly using a spatula or pot bottom.
- Sprinkle the raw beef layer generously with salt, pepper, and garlic powder (or the optional paprika and onion powder rub).
- Place the tortilla beef-side-down into the hot skillet. Cook for about 2–3 minutes, or until the beef is browned and the edges are crispy.
- Carefully flip the tortilla using a wide spatula. Immediately sprinkle the shredded cheese evenly over the entire surface.
- Fold the tortilla over into a half-moon shape. Press gently to seal. Cook both sides for an additional 1–2 minutes until the tortilla is golden brown and crispy and the cheese is fully melted.
- Let the quesadilla rest for 1–2 minutes before slicing it into triangles. Serve immediately with your favorite burger toppings or dipping sauce.
Notes
For the best results, use a cast-iron skillet or griddle and ensure it is very hot. Smash the beef firmly and thinly onto the tortilla for a crispier, juicier result. To enhance crispiness, you can brush the outside of the tortillas with mayonnaise instead of oil before grilling. Resting the quesadilla for 1–2 minutes before slicing helps the melted cheese set.
