Slow Cooker Southwest Beef Casserole

  • 1 lb ground beef Can use ground turkey or chicken for a lighter option.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) diced tomatoes with green chilies Use spicy ones for added heat.
  • 2 cups frozen tater tots Can substitute with mashed potatoes, homemade fries, or nacho chips.
  • 1 cup shredded cheddar cheese Sprinkle on top 30 minutes before serving.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet, brown the ground beef with the chopped onion and minced garlic until fully cooked. Drain excess fat.
  2. In the slow cooker, combine the cooked beef, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Mix well.
Cooking
  1. Top the mixture with frozen tater tots.
  2. Cover and cook on low for 6-8 hours or high for 4 hours.
  3. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top and cover again until melted.
  4. Serve hot.

Notes

Serve with a side salad, tortilla chips, or crusty bread. For added spice, use spicy diced tomatoes or add jalapeƱos. Feel free to mix in other vegetables like bell peppers or zucchini for extra nutrition.
