Method
- Season the beef cubes with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the beef in batches, being careful not to overcrowd the pan. Sear on all sides until browned.
- Transfer the seared beef to your slow cooker.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and tomato paste and cook for another minute, until fragrant.
- Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pan.
- Stir in the Worcestershire sauce, balsamic vinegar, thyme, and smoked paprika.
- Pour the sauce mixture over the beef in the slow cooker.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is incredibly tender.
- About 30 minutes before serving, melt the butter in a skillet over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic!
- Stir in the chopped parsley and red pepper flakes (if using).
- Remove the beef bites from the slow cooker using a slotted spoon and transfer them to the skillet with the garlic sauce.
- Toss to coat the beef bites in the delicious garlic sauce.
- Serve immediately and enjoy!
Notes
For the most tender beef, cook on low for a longer period of time. If the sauce is too thin after slow cooking, thicken it by whisking together 1 tablespoon of cornstarch with 2 tablespoons of cold water and stirring it into the sauce during the last 30 minutes of cooking. These beef bites can be stored in the refrigerator for up to 3 days. For a spicier dish, add a pinch of cayenne pepper or a dash of hot sauce. Adding sliced mushrooms to the slow cooker along with the onions is also an option.
