  • 1 cup sliced mushrooms Mushrooms can be swapped for spinach or kale.
  • 1/2 cup white wine A dry white wine like Sauvignon Blanc or Pinot Grigio is recommended.
  • 1 cup chicken broth Can use chicken broth instead of wine for an alcohol-free version.
  • 2 tablespoons olive oil For cooking the chicken.
  • 2 cloves garlic, minced Adjust the amount of garlic according to preference.
  • 1 teaspoon dried thyme Adds flavor to the sauce.

  • Fresh parsley none for garnish Use as a garnish before serving.

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and sliced mushrooms, and sauté until mushrooms are tender.
  5. Pour in white wine and cook for about 2 minutes.
  6. Add chicken broth and thyme. Return chicken to the skillet and let simmer for 10-15 minutes, or until the chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

This dish can be served over rice, pasta, or with roasted vegetables. Crusty bread is great for soaking up the sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently.
