Ingredients
  

  • 1 lb smoked sausage sliced into 1/2-inch rounds
  • 1.5 lbs baby potatoes halved or quartered
  • 2 bell peppers sliced into strips
  • 1 large red onion cut into wedges
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano or Italian seasoning
  • salt and pepper to taste
  • balsamic glaze for finishing
  • fresh parsley chopped for garnish

Method
 

  1. Preheat oven to 400°F. Line a sheet pan with parchment paper.
  2. Combine sliced sausage, baby potatoes, bell peppers, and red onion on the prepared sheet pan.
  3. Drizzle with olive oil.
  4. Sprinkle garlic powder, oregano or Italian seasoning, salt, and pepper over the mixture.
  5. Toss everything until evenly coated and spread into a single layer.
  6. Roast for 25 to 30 minutes, stirring halfway through cooking, until the potatoes are tender and the edges are crispy.
  7. Remove from the oven.
  8. Drizzle generously with balsamic glaze.
  9. Sprinkle with chopped fresh parsley.
  10. Serve hot.

Notes

Serve with crusty bread for a complete meal. Chicken sausage can be substituted for a lighter version. Stirring halfway through roasting helps vegetables cook evenly and keeps the potatoes crispy. Store leftovers refrigerated for up to 4 days.
