- Preheat oven to 400°F. Line a sheet pan with parchment paper.
- Combine sliced sausage, baby potatoes, bell peppers, and red onion on the prepared sheet pan.
- Drizzle with olive oil.
- Sprinkle garlic powder, oregano or Italian seasoning, salt, and pepper over the mixture.
- Toss everything until evenly coated and spread into a single layer.
- Roast for 25 to 30 minutes, stirring halfway through cooking, until the potatoes are tender and the edges are crispy.
- Remove from the oven.
- Drizzle generously with balsamic glaze.
- Sprinkle with chopped fresh parsley.
- Serve hot.
Notes
Serve with crusty bread for a complete meal. Chicken sausage can be substituted for a lighter version. Stirring halfway through roasting helps vegetables cook evenly and keeps the potatoes crispy. Store leftovers refrigerated for up to 4 days.
