Ingredients
  

  • 4 boneless skinless chicken breasts 7-8 ounces each
  • 0.5 teaspoon chili powder
  • salt and black pepper to taste
  • 15 ounces black beans drained and rinsed
  • 2 cups frozen corn kernels thawed
  • 1 cup bell peppers diced
  • 0.75 cup salsa or drained Rotel tomatoes and green chilies
  • 0.5 cup Mexican cheese blend or Monterey Jack cheese

  • Heavy-duty aluminum foil

Method
 

  1. Preheat grill to medium-high heat.
  2. Place four large sheets of foil on the counter and spray with cooking spray.
  3. Place one chicken breast on each foil sheet and season with chili powder, salt, and black pepper.
  4. Divide black beans, corn, bell peppers, and salsa evenly over the chicken.
  5. Fold and seal the foil packets tightly.
  6. Place packets vegetable side down on the grill for 10 minutes.
  7. Flip packets and grill another 10-12 minutes until chicken reaches 165°F internally.
  8. Transfer packets to a baking pan and carefully open them.
  9. Top each packet with shredded cheese and return to grill until melted.
  10. Serve with desired toppings like cilantro, tomatoes, jalapeños, sour cream, or guacamole.

Notes

These foil packets can also be baked at 375°F for about 30 minutes. Always use a meat thermometer to ensure chicken reaches 165°F. Serve with tortillas, cilantro lime rice, or tomato rice. Great for camping, grilling, and easy backyard dinners.
