Ingredients
  

  • 4 chicken breasts about 1.5 to 2 pounds
  • 8 oz cream cheese softened
  • 1/3 cup mayonnaise
  • 2 cup shredded cheddar cheese divided
  • 2 tbsp ranch seasoning mix
  • 8 cooked bacon crumbled, divided
  • 1 garlic powder and black pepper to taste, optional

Method
 

  1. If bacon is not already cooked, cook it using your preferred method and set aside.
  2. Preheat the oven to 350°F and grease a 9x13 baking dish.
  3. In a medium bowl, combine the cream cheese, mayonnaise, ranch seasoning mix, 1 1/2 cups of the cheddar (reserving 1/2 cup), and half of the crumbled bacon. Add garlic powder and black pepper if using.
  4. Spread the mixture evenly over the chicken breasts in the prepared baking dish.
  5. Sprinkle the remaining cheddar over the top and bake, uncovered, until the chicken reaches 165°F and is no longer pink, about 40 minutes.
  6. Let the chicken rest for a few minutes, then top with the remaining bacon before serving.

Notes

If chicken breasts are thick, tent the dish with foil partway through baking to prevent the topping from overbrowning. Serve over rice, pasta, or mashed potatoes. Store leftovers in an airtight container in the fridge for up to 4 days; not recommended for freezing due to the cream cheese topping.
