- Preheat the oven to 350°F. Place the chicken in a large baking dish, such as an 8x12 pan, and sprinkle with taco seasoning.
- In a bowl, mix the corn, mayonnaise, sour cream, lime juice, salt, pepper, and chili powder together.
- Pour the corn mixture over the chicken in the pan, spreading it evenly.
- Sprinkle the cotija cheese over the top.
- Bake for 25 to 35 minutes, until the chicken is cooked through and reaches 165°F in the thickest part.
- Sprinkle with chopped cilantro before serving.
Notes
Thinner chicken breasts will bake in less time, as little as 20-25 minutes, so check earlier. Add sliced green onions or diced jalapeños for extra flavor. Store leftovers in an airtight container in the fridge for up to 3 days; not recommended for freezing.
