Ingredients
  

  • 1 lb ground chicken
  • 1 packet ranch seasoning mix
  • 1 large egg
  • 0.5 cup breadcrumbs
  • 1 cup mozzarella cheese shredded or sliced
  • 1 tsp garlic powder
  • 2 tbsp parsley chopped, fresh or dried
  • 1 tbsp olive oil or cooking spray for brushing

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, ranch seasoning, egg, breadcrumbs, and garlic powder until just combined.
  3. Shape mixture into golf ball-sized bombs and place on the prepared baking sheet, spaced slightly apart.
  4. Lightly spray or brush the tops with olive oil.
  5. Bake for 18-22 minutes, until cooked through and golden on top.
  6. Top each bomb with mozzarella and broil for 1-2 minutes until melted and bubbly.
  7. Garnish with chopped parsley and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat at 350°F for about 10 minutes. Freeze cooked bombs individually on a tray before transferring to a freezer bag, and reheat from frozen at 375°F for 20-25 minutes. Ground turkey can be substituted for ground chicken. Use gluten-free breadcrumbs and ranch seasoning for a gluten-free version.
