- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix ground chicken, ranch seasoning, egg, breadcrumbs, and garlic powder until just combined.
- Shape mixture into golf ball-sized bombs and place on the prepared baking sheet, spaced slightly apart.
- Lightly spray or brush the tops with olive oil.
- Bake for 18-22 minutes, until cooked through and golden on top.
- Top each bomb with mozzarella and broil for 1-2 minutes until melted and bubbly.
- Garnish with chopped parsley and serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat at 350°F for about 10 minutes. Freeze cooked bombs individually on a tray before transferring to a freezer bag, and reheat from frozen at 375°F for 20-25 minutes. Ground turkey can be substituted for ground chicken. Use gluten-free breadcrumbs and ranch seasoning for a gluten-free version.
