Ingredients

Meatloaf Ingredients
  • 1 lb Ground chicken
  • 1 Egg
  • 1 cup Breadcrumbs
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 cup Ketchup
Mashed Potatoes
  • 2 cups Mashed potatoes
  • 1 cup Shredded cheese Use your choice of cheese.

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, onion, garlic, salt, and pepper. Mix well.
  3. Shape the mixture into a loaf and place it in a baking dish.
  4. Spread ketchup over the top of the meatloaf.
Cooking
  1. Bake for 1 hour, or until the meat is cooked through.
  2. While the meatloaf is baking, prepare the mashed potatoes.
  3. Once the meatloaf is done, top with shredded cheese and return to the oven for an additional 5-10 minutes until the cheese is melted.
  4. Serve warm with mashed potatoes.

Notes

Moisture check: Ensure the meat mixture isn’t too dry; add a little more ketchup or a splash of broth if it feels crumbly. Let the meatloaf rest for 10 minutes before slicing to maintain juiciness. Feel free to mix various cheeses for a unique flavor twist.
