- In a medium bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried Italian herbs, honey (or brown sugar), salt, and pepper. Taste and adjust the seasoning as needed.
- Place the chicken breasts in a resealable bag or shallow dish. Pour the balsamic marinade over the chicken, making sure each piece is coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat your oven to 400°F (200°C).
- Place the marinated chicken breasts in a baking dish.
- Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure accuracy.
- Remove the baking dish from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken breasts.
- Return the dish to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil, if desired. Serve immediately.
Notes
For the juiciest chicken, pound the chicken breasts to an even thickness before marinating. Don't overcook the chicken; use a meat thermometer to ensure it reaches 165°F (74°C). Let the chicken rest for a few minutes after baking to allow the juices to redistribute. To add extra color, broil the chicken for a minute or two after adding the cheese, watching carefully to prevent burning. Serve with pasta, roasted vegetables, salad, mashed potatoes, or rice. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or oven. Feel free to add your favourite vegetables to the baking dish for a more complete meal.
