Ingredients

  • 1 pound ground beef 80/20 blend
  • 1/2 cup bread crumbs panko or regular
  • 1/4 cup milk or milk alternative
  • 1 large egg
  • 1/4 cup grated Parmesan cheese optional
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Equipment

  • large mixing bowl
  • small bowl
  • measuring cups and spoons
  • Baking sheet or large skillet
  • Parchment paper (if baking)
  • Spatula or tongs

Method

  1. Prepare the Bread Crumbs: In a small bowl, combine the bread crumbs and milk. Let it sit for about 5 minutes to allow the bread crumbs to soak up the milk and soften.
  2. Combine the Ingredients: In a large mixing bowl, gently combine the ground beef, soaked bread crumbs, egg, Parmesan cheese (if using), minced garlic, parsley, Italian seasoning, salt, and pepper. Do not overmix.
  3. Shape the Meatballs: Form the mixture into meatballs, about 1-1.5 inches in diameter.
  4. Cook the Meatballs (Baking): Preheat your oven to 400°F (200°C). Place the meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until they are cooked through and browned.
  5. Cook the Meatballs (Pan-Frying): Heat the olive oil in a large skillet over medium heat. Add the meatballs to the skillet, being careful not to overcrowd the pan. Cook for about 8-10 minutes, turning occasionally, until they are browned on all sides and cooked through.
  6. Serve and Enjoy: Serve with your favorite pasta sauce, on sandwiches, as an appetizer, or in soups and stews.

Notes

For extra juicy meatballs, don't overmix the ingredients. Using 80/20 ground beef is highly recommended. Add a pinch of red pepper flakes, fresh oregano, basil, or thyme for flavor variations. A splash of Worcestershire sauce can also enhance the savory taste. Cooked meatballs can be frozen for up to 3 months. To freeze, place them on a baking sheet lined with parchment paper and freeze until solid, then transfer them to a freezer bag or container. Reheat in a skillet, oven, or microwave.
