Hot Honey BBQ Chicken Quesadillas

Crispy flour tortillas filled with shredded chicken tossed in a smoky BBQ sauce and spicy hot honey, layered with melted cheddar and mozzarella cheese.

Ingredients
  

  • 2 cups cooked chicken shredded (rotisserie works great)
  • 0.5 cup BBQ sauce
  • 2 tbsp hot honey
  • 1 tbsp olive oil or butter
  • 1.5 cups cheddar cheese shredded
  • 1.5 cups mozzarella cheese shredded
  • 4 large flour tortillas
  • 0.25 cup red onion thinly sliced

Method
 

  1. In a medium bowl, mix shredded chicken, BBQ sauce, and hot honey until well coated.
  2. Heat a skillet or griddle over medium heat and lightly grease with oil or butter.
  3. Place a tortilla in the skillet. Sprinkle half with a portion of both cheeses.
  4. Layer the BBQ chicken mixture over the cheese. Add red onion and optional jalapeƱo slices.
  5. Sprinkle more cheese over the filling and fold the tortilla in half.
  6. Cook for 2-3 minutes per side until golden brown and cheese is fully melted.
  7. Repeat for remaining tortillas. Slice into wedges and garnish with cilantro.

Notes

Using rotisserie chicken makes this a super fast meal. The 'cheese sandwich' layering (cheese on both sides of the chicken) helps the quesadilla stay together. Reheat in an air fryer to keep the tortilla crispy.
