- In a medium bowl, mix shredded chicken, BBQ sauce, and hot honey until well coated.
- Heat a skillet or griddle over medium heat and lightly grease with oil or butter.
- Place a tortilla in the skillet. Sprinkle half with a portion of both cheeses.
- Layer the BBQ chicken mixture over the cheese. Add red onion and optional jalapeƱo slices.
- Sprinkle more cheese over the filling and fold the tortilla in half.
- Cook for 2-3 minutes per side until golden brown and cheese is fully melted.
- Repeat for remaining tortillas. Slice into wedges and garnish with cilantro.
Notes
Using rotisserie chicken makes this a super fast meal. The 'cheese sandwich' layering (cheese on both sides of the chicken) helps the quesadilla stay together. Reheat in an air fryer to keep the tortilla crispy.
