Honey Garlic Chicken Tenders

Ingredients
  

  • 1 pound chicken tenderloins about 8 tenders, tendons removed
  • 3-4 tbsp olive oil divided
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 3/4 tsp paprika
  • 1/2 tsp red pepper flakes optional
  • 2 tsp minced garlic fresh
  • 1 tbsp honey
  • 1 tbsp fresh parsley chopped
  • 1/2 tbsp butter optional

Method
 

  1. Remove the tendon from each tenderloin by grabbing the end with a paper towel and pulling it straight out.
  2. Place the chicken tenderloins in a shallow glass or non-plastic dish. Add half the olive oil and all the seasonings, then mix until every side of the chicken is coated. Marinate for 15 minutes if time allows, or cook immediately.
  3. Preheat a large skillet over medium heat, then add the remaining olive oil, enough to coat the bottom of the pan. Once the oil shimmers, add the chicken. It should sizzle immediately. Cook 4-5 minutes per side until crispy and golden.
  4. Reduce the heat, then add the honey, minced garlic, and parsley, being careful not to burn the garlic. Stir in the optional butter if desired. Cook 2 more minutes, until the chicken reaches an internal temperature of 165°F.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium-low heat to keep the texture from getting rubbery. Great for meal prep with rice or roasted vegetables. Chicken breasts sliced into strips can be substituted for tenderloins if needed.
