Ingredients
  

  • 1.5-2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups cooked rice long-grain white, brown, or jasmine
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: green onions, sesame seeds, chopped cilantro, sriracha, sour cream or Greek yogurt

Method
 

  1. Cook the rice according to package directions.
  2. Cut the chicken breasts into bite-sized pieces.
  3. Heat olive oil in a large skillet or wok over medium-high heat.
  4. Add the chicken and cook until cooked through and lightly browned, about 5-7 minutes. Cook in batches if necessary.
  5. In a small bowl, whisk together the BBQ sauce, honey, soy sauce, and minced garlic.
  6. Pour the honey BBQ sauce over the cooked chicken and stir well to coat.
  7. Let it simmer for a few minutes, until the sauce has thickened slightly and the chicken is glazed.
  8. Spoon the cooked rice into bowls.
  9. Top with the honey BBQ chicken and your favorite toppings.

Notes

For extra flavor, marinate the chicken in the honey BBQ sauce for at least 30 minutes before cooking. Use a good quality BBQ sauce. Toast sesame seeds for added flavor and crunch. Add steamed broccoli, bell peppers, or onions. Spice it up with red pepper flakes or sriracha. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Use maple syrup or agave nectar as a substitute for honey.
