  • 2 pounds ripe tomatoes Fresh tomatoes provide the best flavor.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil For cooking the onions and garlic.
  • 1 teaspoon salt
  • 1 teaspoon sugar Optional to reduce acidity.
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Freshly ground black pepper to taste

Method
 

Preparation
  1. Wash the tomatoes and cut them into quarters.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until soft, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the tomatoes, salt, sugar, basil, oregano, and pepper.
  5. Bring the mixture to a boil, then lower the heat. Let it simmer uncovered for about 30 minutes, stirring occasionally.
  6. If you prefer a smoother sauce, blend it with an immersion blender until you reach your desired consistency.
  7. Taste and adjust the seasonings as needed.
  8. Cool before storing or using.

Notes

Use fresh, ripe tomatoes for the best flavor. You can peel the tomatoes for a smoother sauce if desired. Experiment with herbs and spices to make your sauce unique. Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
