- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper and sear them in the skillet until golden brown, about 5-7 minutes per side.
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add the diced potatoes and fry for about 10 minutes until tender.
- Pour in heavy cream, stir to combine, and return the chicken to the skillet.
- Let everything simmer on medium-low heat for an additional 10-15 minutes until the chicken is cooked through and the sauce thickens.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat gently in a skillet over low heat, adding a splash of water or cream if the sauce thickens too much. For dairy-free, substitute coconut milk or almond cream for the heavy cream.
