Ingredients
  

  • 4 chicken breasts
  • 2 cup potatoes diced
  • 1 cup heavy cream
  • 4 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 salt and pepper to taste
  • 1 fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper and sear them in the skillet until golden brown, about 5-7 minutes per side.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced potatoes and fry for about 10 minutes until tender.
  6. Pour in heavy cream, stir to combine, and return the chicken to the skillet.
  7. Let everything simmer on medium-low heat for an additional 10-15 minutes until the chicken is cooked through and the sauce thickens.
  8. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat gently in a skillet over low heat, adding a splash of water or cream if the sauce thickens too much. For dairy-free, substitute coconut milk or almond cream for the heavy cream.
