Ingredients
  

  • 1.75 lbs chicken breast cubed
  • 3 cloves garlic minced
  • 2 tsp onion powder
  • 2 tsp mixed herbs
  • 1 tsp chili flakes
  • 2 tsp paprika
  • 1 tsp salt
  • 2 tsp olive oil
  • 1.75 lbs potatoes cubed
  • 1 tsp salt for potatoes
  • 1 tsp garlic powder
  • 1 tsp mixed herbs for potatoes
  • 1 tsp chili flakes for potatoes
  • 1 tsp paprika for potatoes
  • 0.5 cup milk any type
  • 3.5 oz light cream cheese
  • 1.4 oz grated Parmesan cheese
  • 1.75 oz shredded mozzarella
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

  1. In a large bowl, toss the cubed chicken breast with minced garlic, onion powder, mixed herbs, chili flakes, paprika, salt, and olive oil until well coated.
  2. Heat a large deep pan over medium-high heat. Sauté the seasoned chicken for about 5-6 minutes until golden brown.
  3. In another bowl, toss the cubed potatoes with salt, garlic powder, mixed herbs, chili flakes, and paprika until evenly coated.
  4. Place the seasoned potatoes in an air fryer at 400°F for approximately 18-20 minutes, or roast them in an oven for 20-23 minutes until crispy.
  5. Once the chicken is browned, lower the heat and stir in the milk and cream cheese until smooth.
  6. Stir in the grated Parmesan and mozzarella until melted and well combined.
  7. Gently fold the crispy potatoes into the creamy chicken mixture. Let it sit covered for about 4-5 minutes to meld flavors.
  8. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in the oven at 350°F for about 20 minutes covered with foil, or on the stovetop with a splash of milk or broth.
