Ingredients
  

  • 1 lb Italian sausage mild or spicy, casings removed
  • 12 oz rigatoni pasta
  • 1 tbsp olive oil
  • 1 yellow onion medium, finely chopped
  • 3 garlic cloves minced
  • 28 oz crushed tomatoes canned
  • 0.5 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.25 tsp crushed red pepper flakes optional
  • salt and black pepper to taste
  • 0.5 cup grated Parmesan cheese plus extra for garnish
  • fresh basil leaves for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add the rigatoni and cook until al dente, about 11 minutes. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage, breaking it into small pieces with a spoon. Cook until browned and cooked through, about 6 to 8 minutes.
  3. Add the chopped onion to the skillet and sauté until softened, about 4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in the crushed tomatoes and chicken broth. Stir in the oregano, basil, red pepper flakes if using, salt, and pepper. Bring the sauce to a simmer, reduce heat to medium-low, and let it cook for 10 minutes to develop flavor.
  5. Add the cooked rigatoni to the sauce and toss gently to coat evenly. Stir in the grated Parmesan cheese until melted and combined.
  6. Remove from heat and let the pasta rest for a couple of minutes to thicken the sauce slightly.
  7. Serve hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently on the stovetop with a splash of water or broth. Freezes well for up to 2 months. Ground turkey can substitute for the sausage, and penne or ziti can substitute for rigatoni.
