Ingredients
  

  • 2 pieces boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 4 cups broccoli florets
  • 2 cups cooked rice or quinoa
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp parsley chopped

Method
 

  1. Preheat a grill or grill pan over medium-high heat.
  2. Rub chicken breasts with olive oil, paprika, garlic powder, salt, and black pepper.
  3. Grill the chicken for 5 to 7 minutes per side until fully cooked.
  4. Let the chicken rest for a few minutes, then slice into strips.
  5. Steam or roast the broccoli until tender-crisp.
  6. Whisk together mayonnaise, Greek yogurt or sour cream, garlic, lemon juice, parsley, salt, and black pepper to make the sauce.
  7. Divide rice or quinoa among serving bowls.
  8. Top with grilled chicken and broccoli.
  9. Drizzle with creamy garlic sauce and serve warm.

Notes

Quinoa can replace rice for extra protein and fiber. Add avocado or roasted vegetables for more variety. Store components separately in airtight containers for up to 3 days.
