Method
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9x13 inch baking dish.
- Spread the melted butter evenly over both sides of each slice of bread.
- Place half of the bread slices in the prepared baking dish, overlapping slightly to cover the bottom.
- In a large bowl, combine the shredded cheddar cheese, Monterey Jack cheese, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.
- Spread the cheese mixture evenly over the layer of bread in the baking dish. Make sure to get into all the nooks and crannies!
- Place the remaining buttered bread slices on top of the cheese filling, buttered side up. Again, overlap slightly to cover the cheese completely.
- If you're using any of the optional toppings, now is the time to sprinkle them on top.
- Cover the baking dish with aluminum foil.
- Bake for 20 minutes.
- Remove the foil and bake for another 10-15 minutes, or until the bread is golden brown and the cheese is melted and bubbly.
- Remove the casserole from the oven and let it rest for 5-10 minutes before slicing and serving.
Notes
For best results, use freshly shredded cheese. To prevent the bread from browning too quickly, cover the casserole with foil for the remaining baking time. Leftover Grilled Cheese Casserole can be stored in the refrigerator for up to 3 days. Reheat individual slices in the microwave or bake the entire casserole in a preheated oven at 350°F (175°C) until heated through. Variations include Pizza Grilled Cheese Casserole, Ham and Swiss Grilled Cheese Casserole, Spinach and Artichoke Grilled Cheese Casserole, and Jalapeño Popper Grilled Cheese Casserole.
