- Pat the steak bites completely dry with paper towels. Season with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat until very hot.
- Add steak bites in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned.
- Lower heat to medium. Add butter, minced garlic, and Italian seasoning to the skillet.
- Toss the steak bites in the melting butter for about 1 minute until fragrant and well coated.
- Garnish with fresh parsley and serve immediately.
Notes
Patting the steak dry is essential for a good sear. Do not overcrowd the pan or the meat will steam instead of browning. Use a cast iron skillet for the best results.
