Ingredients

  • 1.5 lbs sirloin steak cut into bite-sized cubes
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 5 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tbsp fresh parsley chopped

Equipment

  • Large skillet (cast iron preferred)
  • tongs

Method

  1. Pat the steak bites completely dry with paper towels. Season with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat until very hot.
  3. Add steak bites in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned.
  4. Lower heat to medium. Add butter, minced garlic, and Italian seasoning to the skillet.
  5. Toss the steak bites in the melting butter for about 1 minute until fragrant and well coated.
  6. Garnish with fresh parsley and serve immediately.

Notes

Patting the steak dry is essential for a good sear. Do not overcrowd the pan or the meat will steam instead of browning. Use a cast iron skillet for the best results.
