Ingredients
  

  • 2 lb chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp chicken base paste-style bouillon
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 0.25 tsp dried thyme
  • 4 tbsp butter
  • 4 garlic cloves minced
  • 0.25 cup grated Parmesan cheese
  • 1 tsp red pepper flakes
  • 0.25 cup fresh parsley finely chopped

Method
 

  1. Melt the butter on the stovetop or in the microwave. Stir in the minced garlic and red pepper flakes, then set the mixture aside.
  2. In a large skillet, combine the chicken with the olive oil, chicken base, paprika, garlic powder, onion powder, black pepper, and thyme. Stir to coat the chicken evenly.
  3. Cook over medium-high heat until seared on all sides, about 5 minutes. Pour the garlic butter over the chicken bites and stir for 30 to 60 seconds, scraping the bottom of the pan to loosen any brown bits, until evenly coated.
  4. Stir in the Parmesan and chopped parsley and toss to coat. Continue to cook until the chicken is done (165°F internal temperature), about 1 to 2 more minutes. Serve warm.

Notes

Chicken thighs can be used in place of chicken breast. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month and thaw overnight in the fridge before reheating. Reheat in the microwave in 30-second increments or covered with foil in the oven. This recipe can easily be doubled or halved.
