- Melt the butter on the stovetop or in the microwave. Stir in the minced garlic and red pepper flakes, then set the mixture aside.
- In a large skillet, combine the chicken with the olive oil, chicken base, paprika, garlic powder, onion powder, black pepper, and thyme. Stir to coat the chicken evenly.
- Cook over medium-high heat until seared on all sides, about 5 minutes. Pour the garlic butter over the chicken bites and stir for 30 to 60 seconds, scraping the bottom of the pan to loosen any brown bits, until evenly coated.
- Stir in the Parmesan and chopped parsley and toss to coat. Continue to cook until the chicken is done (165°F internal temperature), about 1 to 2 more minutes. Serve warm.
Notes
Chicken thighs can be used in place of chicken breast. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month and thaw overnight in the fridge before reheating. Reheat in the microwave in 30-second increments or covered with foil in the oven. This recipe can easily be doubled or halved.
