- In a mixing bowl, whisk together eggs, milk, sugar, vanilla, and cinnamon until smooth.
- Preheat the waffle iron and lightly grease with butter or spray.
- Dip each slice of bread into the custard, coating both sides well.
- Cook bread slices in the waffle iron until golden and crisp, about 3–4 minutes per slice.
- Meanwhile, combine peaches, honey, brown sugar, cinnamon, lemon juice, and water in a saucepan. Simmer over medium heat until peaches soften and sauce thickens, about 8–10 minutes.
- Stack the French toast waffles on plates and spoon peach sauce over the top before serving.
Notes
Use day-old brioche or challah for the best texture. The peach sauce can be swapped for seasonal fruits like berries, apples, or pears. For dairy-free, use almond or oat milk. Keep waffles warm in a 200°F oven if cooking in batches.
