French Dip Tortilla Roll-Ups with Savory Au Jus

Ingredients
  

  • 4 12-inch flour tortillas burrito size
  • 4 slices Provolone cheese torn into pieces
  • 0.5 lb deli sliced roast beef thinly sliced
  • 0.75 cup French fried onions
  • 1 tbsp olive oil divided
  • 1 10.5 oz can beef consommé
  • 0.75 cup water
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 0.5 tsp onion powder
  • 0.5 tsp garlic powder

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Lay tortillas flat. Evenly distribute torn provolone, roast beef, and French fried onions onto each.
  3. Fold sides in and roll tightly. Brush edges with olive oil to seal and place seam-side down on baking sheet.
  4. Brush tops with remaining oil and bake for 10 minutes until golden and crisp.
  5. While baking, combine consommé, water, Worcestershire, soy sauce, and spices in a saucepan. Warm through over medium heat.
  6. Cut roll-ups in half and serve with small bowls of the warm au jus.

Notes

Warming tortillas in the microwave for 10 seconds makes them easier to roll. Beef consommé provides a much richer dipping sauce than standard broth. These are best served immediately to keep the onion crunch.
