Method
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Lay tortillas flat. Evenly distribute torn provolone, roast beef, and French fried onions onto each.
- Fold sides in and roll tightly. Brush edges with olive oil to seal and place seam-side down on baking sheet.
- Brush tops with remaining oil and bake for 10 minutes until golden and crisp.
- While baking, combine consommé, water, Worcestershire, soy sauce, and spices in a saucepan. Warm through over medium heat.
- Cut roll-ups in half and serve with small bowls of the warm au jus.
Notes
Warming tortillas in the microwave for 10 seconds makes them easier to roll. Beef consommé provides a much richer dipping sauce than standard broth. These are best served immediately to keep the onion crunch.
