- Cut the chicken breasts in half lengthwise to make 4 thinner pieces. Sprinkle with garlic powder, salt, and pepper.
- Heat the olive oil and 1 tablespoon of the butter in a skillet over medium-high heat for a few minutes.
- Add the chicken and cook for about 5 to 6 minutes per side, until golden and cooked through to 165°F. Transfer to a plate.
- Reduce heat to medium, add the remaining butter and the sliced onion. Sauté for 10 to 15 minutes, until softened and lightly browned.
- Stir in the minced garlic and cook for about 30 seconds.
- Stir in the chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.
- Stir in the sour cream until smooth, and let it heat through for a couple of minutes without letting it boil.
- Return the chicken to the skillet, spoon sauce over top, season to taste, and serve with chopped parsley.
Notes
If the sauce is too thick, add a splash more chicken broth. Store leftovers in a covered container in the refrigerator for 3 to 4 days and reheat gently over low heat, adding more broth or sour cream as needed. Freezing is not recommended, as creamy sauces tend to separate after thawing.
