- Prep the ingredients: Dice the onion and bell peppers, mince the garlic, and remove the turkey sausage from its casings.
- Heat the olive oil in a large skillet over medium heat. Add the turkey sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the skillet and set aside.
- Add the diced onion and bell peppers to the skillet and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Return the cooked turkey sausage to the skillet with the vegetables. Add the frozen pierogi, chicken broth, and Italian seasoning. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook until the pierogi are tender and heated through, about 10-15 minutes. Be sure to stir occasionally to prevent sticking.
- Once the pierogi are cooked through, season the skillet with salt and pepper to taste. Give it a final stir, and then it's ready to serve.
- Top with your favorite toppings, such as sour cream, chopped green onions, or shredded cheese.

Don't overcrowd the skillet; cook in batches if necessary. Stir occasionally to prevent sticking, adding extra chicken broth if needed. For extra flavor, brown the pierogi before adding the chicken broth. Use high-quality sausage for the best results. Customize the vegetables to your liking. To make it spicy, add red pepper flakes or hot sauce. For a creamy version, stir in sour cream or cream cheese at the end. To make it cheesy, sprinkle shredded cheese over the skillet during the last few minutes of cooking. To make a vegetarian version, substitute the turkey sausage with plant-based sausage or leave it out altogether. Serve with a side salad, steamed vegetables, garlic bread, or coleslaw. This dish can be made ahead and stored in the refrigerator for up to 3 days.
