Ingredients
  

  • 1 lb lean ground beef 90/10 or 93/7
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt plus more to taste
  • 0.25 tsp black pepper
  • 0.5 cup sharp cheddar cheese shredded
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 0.5 cup dill pickles chips or diced
  • 0.25 cup red onion thinly sliced
  • 1 medium avocado sliced or diced
  • 0.25 cup mayonnaise for sauce
  • 2 tbsp sugar-free ketchup for sauce
  • 1 tbsp mustard for sauce
  • 1 tsp pickle juice for sauce

Equipment

Method
 

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon for 6-8 minutes.
  2. Drain any excess grease. Reduce heat to medium-low and add garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  3. Sprinkle cheddar cheese over the beef and cover the pan for 1 minute until melted. Remove from heat.
  4. In a small bowl, whisk together mayo, ketchup, mustard, and pickle juice to create the special sauce.
  5. Divide romaine lettuce among 4 bowls. Top with the cheesy beef mixture.
  6. Add cherry tomatoes, red onion, pickles, and avocado to each bowl. Drizzle with sauce and serve.

Notes

Storage: Store beef and vegetables separately for up to 4 days. Variation: Add cooked bacon bits for a Bacon Cheeseburger Bowl. Pro Tip: Use sugar-free condiments to keep the carbs low.
