Ingredients
  

  • 1 pound pasta spaghetti, linguine, or fettuccine
  • 6 tablespoons butter
  • 8 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved pasta water
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package directions until al dente.
  3. Before draining the pasta, reserve about 1/4 cup of the pasta water.
  4. Drain the pasta and set aside.
  5. While the pasta is cooking, melt the butter in a large skillet over medium heat.
  6. Add the minced garlic and cook for 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.
  7. Pour in the heavy cream and bring to a simmer.
  8. Stir in the Parmesan cheese until melted and smooth.
  9. Season with salt and freshly ground black pepper to taste.
  10. Add the cooked pasta to the skillet with the sauce.
  11. Toss to coat, adding a little of the reserved pasta water if needed to create a creamy consistency.
  12. Serve immediately, garnished with fresh parsley and extra Parmesan cheese, if desired.

Notes

Garlic Burning? Reduce the heat immediately. For a thicker sauce, simmer longer or add more Parmesan. For a thinner sauce, add more pasta water. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or skillet, adding water or cream as needed. Consider adding grilled chicken, shrimp, or vegetables for variations.
