Method
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package directions until al dente.
- Before draining the pasta, reserve about 1/4 cup of the pasta water.
- Drain the pasta and set aside.
- While the pasta is cooking, melt the butter in a large skillet over medium heat.
- Add the minced garlic and cook for 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and smooth.
- Season with salt and freshly ground black pepper to taste.
- Add the cooked pasta to the skillet with the sauce.
- Toss to coat, adding a little of the reserved pasta water if needed to create a creamy consistency.
- Serve immediately, garnished with fresh parsley and extra Parmesan cheese, if desired.
Notes
Garlic Burning? Reduce the heat immediately. For a thicker sauce, simmer longer or add more Parmesan. For a thinner sauce, add more pasta water. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or skillet, adding water or cream as needed. Consider adding grilled chicken, shrimp, or vegetables for variations.
