Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups cherry tomatoes diced
  • 2 cloves garlic minced
  • 2 tbsp fresh basil chopped
  • 1 tbsp balsamic vinegar
  • 1 cup mozzarella cheese shredded or sliced
  • 2 tbsp balsamic glaze optional for drizzling

Method
 

  1. Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a skillet or grill pan over medium heat.
  3. Cook the chicken for 5 to 7 minutes per side until fully cooked and golden brown.
  4. In a bowl, combine diced cherry tomatoes, minced garlic, chopped basil, and balsamic vinegar.
  5. Mix the bruschetta topping well and let it sit for a few minutes.
  6. Top the cooked chicken with mozzarella cheese.
  7. Cover briefly to melt the cheese.
  8. Spoon the bruschetta mixture over the chicken.
  9. Drizzle with balsamic glaze if desired and serve warm.

Notes

This recipe can be grilled, baked, or cooked on the stovetop. Serve with pasta, salad, or roasted vegetables. Store leftovers in the refrigerator for up to 3 days.
