Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1/2 cup BBQ sauce
  • 2 cups cooked rice
  • 1 cup corn kernels
  • 1 cup black beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 medium avocado diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 2 pieces green onions sliced
  • 2 tbsp fresh cilantro chopped for garnish
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

  1. In a skillet over medium heat, combine the cooked chicken and BBQ sauce.
  2. Stir well and heat until the chicken is warmed through and evenly coated.
  3. Divide the cooked rice among serving bowls.
  4. Top the rice with BBQ chicken, corn, black beans, cherry tomatoes, and diced avocado.
  5. Sprinkle shredded cheddar cheese over each bowl.
  6. Drizzle ranch dressing on top.
  7. Garnish with sliced green onions and fresh cilantro.
  8. Season with salt and black pepper if needed.
  9. Serve immediately while warm.

Notes

Rotisserie chicken works great for quicker preparation. Brown rice or cauliflower rice can replace white rice. Store ingredients separately in airtight containers for meal prep and refrigerate leftovers for up to 3 days.
