Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1 egg, beaten
  • 1 cup cooked rice
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions

  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp honey
  • 1 tsp Sriracha sauce
  • 1 tsp soy sauce
  • 1 clove garlic, minced

Method
 

  1. Preheat oven to 400°F (200°C). Cut chicken into bite-sized pieces. Set up a breading station with beaten egg in one dish and panko in another.
  2. Dip chicken in egg, then coat in panko. Place on a baking sheet (preferably with a wire rack). Bake for 20–25 minutes until crispy and cooked through.
  3. In a small bowl, whisk mayonnaise, sweet chili sauce, honey, Sriracha, soy sauce, and garlic until smooth.
  4. Divide rice, cabbage, and carrots into bowls. Top with baked chicken pieces.
  5. Drizzle sauce over chicken and rice. Sprinkle with sesame seeds and sliced green onions.

Notes
