Creamy Caramelized Onion Chicken

Ingredients
  

  • 2-3 medium boneless, skinless chicken breasts
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp avocado oil
  • 4 tbsp butter
  • 1 cup onions finely chopped or sliced
  • 1 tbsp balsamic vinegar
  • 0.5 tsp honey or sugar
  • 0.5 cup chicken broth or stock
  • 1 cup heavy cream
  • 0.25 cup parmesan cheese freshly grated, optional

Method
 

  1. Slice the chicken breasts in half horizontally to make them thinner. Whisk together the garlic powder, paprika, oregano, salt, and pepper, then season both sides of the chicken.
  2. Heat the avocado oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, until golden and cooked through. Remove to a plate.
  3. In the same skillet, add the butter and chopped onions. Cook over low-medium heat for 10-15 minutes, stirring as needed, until softened and golden brown.
  4. Add the balsamic vinegar and honey, and sauté for 1-2 minutes.
  5. Turn the heat to high, whisk in the chicken broth, and bring to a boil. Reduce heat to low, pour in the heavy cream, and simmer for 1-2 minutes until slightly thickened. If the sauce is too thick, whisk in more chicken broth.
  6. Stir in the parmesan cheese and add the chicken back to the pan. Spoon some of the sauce onto the chicken without fully submerging it. Serve with rice, pasta, mashed potatoes, or steamed vegetables.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave or skillet, adding a splash of chicken broth if the sauce thickens too much. Not recommended for freezing since the cream sauce can separate after thawing. For a low-carb option, serve over cauliflower rice or mashed cauliflower.
