Method
- Preheat the oven to 375°F (190°C).
- Cook the manicotti shells according to package instructions until al dente.
- Drain carefully and set aside to cool slightly.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 3 to 4 minutes.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Drain excess grease if necessary.
- Stir in marinara sauce, Italian seasoning, salt, and black pepper.
- Simmer the sauce for 10 minutes.
- In a mixing bowl, combine ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, and parsley.
- Fill each cooked manicotti shell with the cheese mixture.
- Spread a layer of meat sauce in the bottom of a greased baking dish.
- Arrange the filled manicotti shells over the sauce.
- Pour the remaining meat sauce over the manicotti.
- Sprinkle the remaining mozzarella cheese evenly on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
Notes
Refrigerate leftovers in an airtight container for up to 4 days. Freeze assembled manicotti before baking for up to 2 months. Reheat covered in the oven at 350°F until warmed through. Cottage cheese may replace ricotta cheese. Add spinach or mushrooms to the filling for extra flavor and nutrition.
