  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 cups cooked chicken, shredded
  • 3 cups chicken broth
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

  1. In a large pot, heat the olive oil over medium heat. Sauté the onion, carrots, and celery until soft.
  2. Add the garlic and cook for another minute.
  3. Stir in the orzo and cook for 2 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Lower the heat and simmer until the orzo is cooked, about 10 minutes.
  6. Stir in the shredded chicken, frozen peas, heavy cream, thyme, salt, and pepper.
  7. Cook for another 5 minutes until everything is heated through.
  8. Serve hot, garnished with fresh parsley.

Notes

Leftover Chicken Pot Pie Orzo can be stored in an airtight container in the refrigerator for up to 3-4 days. When reheating, you may want to add a splash of broth or cream to maintain the creaminess.
