Ingredients
  

  • 1.5 lbs chicken breast cut into bite-sized cubes
  • 2 large zucchinis sliced into half-moons
  • 2 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup marinara sauce or crushed tomatoes
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan grated
  • 1 tsp Italian seasoning

Method
 

  1. Preheat oven to 400°F (200°C). Brown chicken cubes in olive oil in a large skillet for 5 minutes.
  2. Add onion and zucchini; sauté 3-4 minutes until they begin to soften.
  3. Stir in minced garlic and Italian seasoning, cooking for 1 minute.
  4. Pour in marinara sauce and simmer for 2 minutes.
  5. Remove from heat. Sprinkle mozzarella and Parmesan evenly over the top.
  6. Bake in the skillet (or transfer to a baking dish) for 15-20 minutes until cheese is golden and bubbly.
  7. Garnish with fresh herbs and serve.

Notes

To avoid a watery sauce, do not over-sauté the zucchini before baking. If you have extra time, salt the zucchini and pat dry to remove excess moisture. This dish is perfect for meal prep but does not freeze well due to the zucchini's texture.
