Cheesy Chicken Garlic Bread Sandwich

A quick and comforting cheesy chicken sandwich recipe made with crispy garlic bread, melted cheese, sautéed vegetables, and shredded chicken.

Ingredients
  

  • 8 slices brown bread
  • 9 cloves garlic finely grated
  • 2 cups grated cheese mozzarella preferred
  • 1 tsp black pepper powder
  • 1 tsp dried oregano
  • 1 tsp red chilli flakes
  • 1 medium onion sliced
  • 1 medium tomato sliced
  • 1 medium capsicum sliced
  • 1 cup cabbage shredded
  • 50 g boiled chicken shredded
  • 1 tsp honey
  • 1 tsp salt or to taste
  • 1 tsp black pepper to taste
  • 2 tbsp olive oil for cooking
  • 2 tbsp ketchup optional

Method
 

  1. Mix grated cheese with finely grated garlic, black pepper powder, and oregano.
  2. Spread the cheese mixture evenly onto the bread slices.
  3. Heat a pan with olive oil over medium heat and place the bread slices on the pan.
  4. Cook until the cheese melts and the bread turns crispy.
  5. Add ketchup and sprinkle red chilli flakes over the bread if desired.
  6. Slice the onion, tomato, capsicum, and shred the cabbage and chicken.
  7. Heat olive oil in another pan and sauté the onion first.
  8. Add tomato, capsicum, cabbage, and shredded chicken.
  9. Season with salt, black pepper, and honey. Sauté lightly until combined.
  10. Place the chicken filling onto one cheesy bread slice and top with another slice to form a sandwich.
  11. Serve hot.

Notes

Use mozzarella cheese for extra stretchiness. Add extra vegetables if desired. Store leftover filling in the refrigerator for up to 2 days. Serve with fries, soup, or salad for a full dinner meal.
