- In a small bowl, combine mayonnaise, sweet pickle relish, yellow mustard, white wine vinegar, garlic powder, onion powder, paprika, and sugar.
- Mix well until all ingredients are fully incorporated.
- Taste and adjust seasonings as needed. Add more sugar for sweetness or vinegar for tanginess.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Divide the ground beef into 12 equal portions (about 1.3 ounces each) and form into loose balls. Do not overwork the meat.
- Heat olive oil in a large skillet or griddle over medium-high heat.
- Place the beef balls onto the hot skillet, leaving space between each one.
- Using a burger press or a sturdy spatula, immediately smash each ball down into a thin patty, about 1/4 inch thick.
- Season generously with salt and pepper.
- Cook for 2-3 minutes per side, or until the edges are crispy and the patties are cooked through.
- During the last minute of cooking, top each patty with shredded cheddar cheese and let it melt.
- Warm the tortillas according to package instructions.
- Place a cheesy smash burger patty onto each tortilla.
- Top with shredded lettuce, diced onion, chopped dill pickles, and a generous dollop of Big Mac sauce.
- Garnish with sesame seeds, if desired.
