- Heat the olive oil in a large skillet over medium heat.
- Add the sliced mushrooms and onions to the skillet. Cook, stirring occasionally, until the mushrooms are tender and have released their moisture, about 8-10 minutes. Don't overcrowd the pan; if needed, cook in batches to ensure even browning.
- Add the minced garlic, dried thyme, salt, and pepper to the skillet. Cook for another minute until fragrant.
- Stir in the butter and Worcestershire sauce. Cook until the butter is melted and everything is well combined. Remove from heat and set aside.
- Spread softened butter on one side of each slice of bread.
- Place two slices of bread, butter-side down, in a clean skillet or on a griddle over medium-low heat.
- Top each slice of bread with half of the mushroom mixture.
- Layer the Swiss cheese slices over the mushrooms.
- Top with the remaining two slices of bread, butter-side up.
- Cook the sandwiches until the bread is golden brown and the cheese is melted and gooey, about 3-5 minutes per side. You may need to press down gently on the sandwiches with a spatula to help the cheese melt evenly.
- Once the sandwiches are toasted to your liking and the cheese is melted, remove them from the skillet and cut them in half.

For best results, use softened butter and cook the sandwiches over medium-low heat to allow the cheese to melt completely without burning the bread.
