Ingredients
  

  • 30 ounces frozen tater tots
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 15- ounce can black beans, rinsed and drained
  • 1 15- ounce can corn, drained
  • 1 14.5- ounce can diced tomatoes, drained
  • 1/2 cup chopped green onions
  • 1/4 cup sliced jalapeños
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup salsa
  • 1/4 cup water

Method
 

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). Alternatively, heat oil to 350°F (175°C) for deep frying.
  2. Prepare tater tots according to chosen method: Oven-bake for 20-25 minutes, air fry for 10-12 minutes, or deep fry for 2-3 minutes, until golden brown and crispy.
  3. While tater tots are cooking, brown ground beef in a large skillet over medium heat. Drain off any excess grease.
  4. Stir in taco seasoning and water. Simmer for a few minutes.
  5. Rinse and drain black beans and corn. Dice tomatoes if using fresh.
  6. Arrange cooked tater tots in a single layer on a large oven-safe platter or baking sheet.
  7. Sprinkle cooked ground beef evenly over the tater tots.
  8. Add black beans, corn, and diced tomatoes.
  9. Generously sprinkle shredded cheese over everything.
  10. Place the platter in a preheated oven (350°F/175°C) for 5-10 minutes, or until the cheese is melted and bubbly. Alternatively, use the broiler for a minute or two or microwave in short intervals until cheese is melted.
  11. Remove from oven and let cool slightly.
  12. Dollop with sour cream, guacamole, and salsa.
  13. Sprinkle with chopped green onions and jalapeños.
  14. Serve immediately.

Notes

Don't overcrowd the pan when baking or air frying tater tots. Use a cheese blend for depth of flavor. Warm toppings before adding them to the nachos.
