Ingredients
  

  • 1.5 lbs ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk or beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 lbs russet potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large skillet, cook ground beef over medium heat until browned, breaking it up with a spoon. Drain off any excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in cream of mushroom soup, milk (or broth), salt, pepper, garlic powder, onion powder, and paprika. Bring to a simmer.
  5. Arrange half of the sliced potatoes in the bottom of the prepared baking dish. Pour half of the ground beef mixture over the potatoes. Repeat with the remaining potatoes and ground beef mixture.
  6. Cover the baking dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and sprinkle with cheese. Bake for another 15-20 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
  8. Let the casserole rest for a few minutes before serving.

Notes

For extra flavor, add chopped carrots, celery, or bell peppers to the ground beef mixture. You can also substitute ground turkey or chicken for the ground beef. Use different types of cheese or soup to customize the flavor. To prevent browning, submerge sliced potatoes in cold water until ready to assemble the casserole. Leftovers can be stored in the refrigerator for 3-4 days.
