Ingredients
  

  • 1.5 lbs beef sirloin or ribeye, cut into 1-inch cubes
  • 2 tablespoons olive oil for beef
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes optional
  • Salt to taste
  • Black pepper to taste
  • 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil for potatoes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons beef broth optional
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with 2 tablespoons olive oil, 1 teaspoon garlic powder, 1/2 teaspoon paprika, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until golden brown and tender, flipping halfway through.
  5. Pat the beef cubes dry with paper towels and season generously with salt and pepper.
  6. Heat 2 tablespoons olive oil in a large skillet (cast iron is recommended) over medium-high heat.
  7. Add the beef cubes in a single layer (work in batches if necessary).
  8. Sear for about 2-3 minutes per side, until nicely browned.
  9. Reduce the heat to medium.
  10. Add the butter and minced garlic to the skillet.
  11. As the butter melts, tilt the pan and spoon the garlic butter over the beef bites for about a minute.
  12. If using, stir in the beef broth and lemon juice. Let it simmer for another minute, allowing the sauce to slightly reduce and thicken.
  13. Stir in the chopped parsley and thyme. Taste and adjust seasoning if needed.
  14. Gently toss the roasted potatoes with the garlic butter beef bites in the skillet.
  15. Serve immediately and enjoy!

Notes

Don't overcrowd the pan when searing the beef. Pat the beef dry for a better sear. For a spicier dish, increase the red pepper flakes or add hot sauce. Serve with a green salad, roasted asparagus, or garlic bread. Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or microwave with a splash of beef broth or water.
