- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potato cubes with 2 tablespoons olive oil, 1 teaspoon garlic powder, 1/2 teaspoon paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until golden brown and tender, flipping halfway through.
- Pat the beef cubes dry with paper towels and season generously with salt and pepper.
- Heat 2 tablespoons olive oil in a large skillet (cast iron is recommended) over medium-high heat.
- Add the beef cubes in a single layer (work in batches if necessary).
- Sear for about 2-3 minutes per side, until nicely browned.
- Reduce the heat to medium.
- Add the butter and minced garlic to the skillet.
- As the butter melts, tilt the pan and spoon the garlic butter over the beef bites for about a minute.
- If using, stir in the beef broth and lemon juice. Let it simmer for another minute, allowing the sauce to slightly reduce and thicken.
- Stir in the chopped parsley and thyme. Taste and adjust seasoning if needed.
- Gently toss the roasted potatoes with the garlic butter beef bites in the skillet.
- Serve immediately and enjoy!
Notes
Don't overcrowd the pan when searing the beef. Pat the beef dry for a better sear. For a spicier dish, increase the red pepper flakes or add hot sauce. Serve with a green salad, roasted asparagus, or garlic bread. Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or microwave with a splash of beef broth or water.
