- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken breasts for 3-4 minutes per side, until golden brown. They don't need to be fully cooked at this point.
- In a small bowl, whisk together honey, Dijon mustard, mayonnaise, yellow mustard, Worcestershire sauce, and garlic powder.
- Pour honey mustard sauce over the chicken breasts in the skillet.
- Top each chicken breast with crumbled bacon, cheddar cheese, and Monterey Jack cheese.
- Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and cheese is melted and bubbly.
- Let rest for a few minutes before serving.
Notes
For best results, use freshly cooked and crumbled bacon. Adjust the honey and mustard ratios in the sauce to your liking. Ensure the cheese is evenly distributed for optimal melting. Serve with roasted vegetables, mashed potatoes, or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
