Beef Taco Pasta

A cheesy, one-pot pasta dinner made with ground beef, taco seasoning, and melted cheddar, ready in about 30 minutes.

Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 2 garlic cloves minced
  • 0.5 lb ground beef
  • 1 packet taco seasoning about 1 ounce
  • 15 oz diced tomatoes with juices
  • 4 oz diced green chiles with juices
  • 0.5 lb small pasta shells uncooked
  • 2 cup beef broth
  • 1 cup cheddar cheese shredded
  • 2 green onions sliced

  • Deep skillet or wide-bottomed pot

Method
 

  1. Add the olive oil, diced onion, and minced garlic to a deep skillet or wide-bottomed pot. Sauté over medium heat until the onions are soft.
  2. Add the ground beef and taco seasoning and continue to cook and stir until the ground beef is cooked through.
  3. Add the diced tomatoes and diced green chiles, with their juices, and stir to combine.
  4. Add the pasta and beef broth and stir to combine. It's okay if the pasta is not fully submerged under the broth.
  5. Place a lid on the pot and turn the heat up to medium-high. Allow the broth to come to a full boil, then stir the pasta, replace the lid, and reduce the heat to medium-low.
  6. Let the pasta simmer, stirring every few minutes and always replacing the lid, for about 10 minutes or until the pasta is tender. There should still be some thick, saucy liquid left in the pot.
  7. Stir in the shredded cheddar cheese until melted into the sauce. Top with sliced green onions and serve.

Notes

Store leftovers in an airtight container in the fridge for 3 to 4 days; the pasta will thicken as it sits. Reheat with a splash of broth or water. Freezes well for up to 3 months. Ground turkey or chicken can be used in place of beef, and black beans can replace the meat for a vegetarian version.
