  • 800 g boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1.5 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp cumin
  • 0.25 tsp chili powder optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken thighs dry with paper towels. Toss in a large bowl with olive oil.
  3. Whisk together the smoked paprika, garlic powder, onion powder, oregano, cumin, salt, and pepper. Coat the chicken evenly.
  4. Arrange chicken in a single layer on the baking sheet.
  5. Bake for 22-25 minutes until internal temperature reaches 165°F.
  6. Broil for the last 2-3 minutes for extra color. Let rest for 5 minutes before serving.

Notes

Patting the chicken dry is essential for a good sear. Doubling the spice mix creates a great house rub for future use. For a lower fat version, swap thighs for breasts but reduce bake time to 18-20 minutes.
